Join us for an award winning "Bait to Plate" experience which will see you taking on the challenge of catching a Trout "on the fly" before spending the afternoon getting hands on preparing & cooking a seasonal selection of fish & seafood dishes at the Fins & Forks Kitchen ahead of the culmination of the day... the Chef's Table dining. You can also expect to prepare and cure your catch ready for cold smoking. We then post your fish out to you once the smoking process is complete.
Our day starts with a guided fly fishing experience at the gin clear waters of Chalk Springs Trout Fishery nestled on the edge of the historic and beautiful market town of Arundel. We begin with a little basic instruction to give you the best chance of catching that monster, then head to the lakes to cast our fly for the first time. Throughout our fishing time you will receive support and tuition from a licenced angling coach.
Although we can never guarantee fish so far 85% of our clients have caught successfully had trout to the net. (1 fish is provided per person - so even if you don't manage to catch it yourself you wont go away empty handed)
Following an incredibly immersive fishing session (complete with a homemade half-time snack & soft drink) and with fish in hand we make the short journey (15-20 minutes) over to Fins & Forks HQ for a hands on session at our smokehouse kitchen.
After sampling our smokehouse pate and settling in we get hands on, with you preparing and curing your catch for cold smoking (choosing from beetroot/coffee or plain cure flavours)
We then move on to preparing a selection of our favourite seasonal recipes using freshly landed & responsibly sourced Sussex saltwater species ahead of the culmination of the day... The Chefs Table dining experience. Here you get to sit back and relax whilst enjoying a tasting menu of the dishes we have just prepared.
To compliment your meal we stock a range of Sussex's best still & sparkling wines, craft beers and spirits, these are available to purchase on the day (once the knifes go away)
After you leave us (complete with full belly, new culinary skills and tales of epic fishing battles) we will get to work putting your fish through the cold smoker. When its ready we then hand slice, package and post it out to you in chilled insulated packaging, ensuring your fish is at its absolute best when it arrives at your door.
Suitable for all abilities, absolute fishing and kitchen beginners are welcomed with open arms. This experience is hosted by a fully qualified chef & licensed angling coach.
PLEASE NOTE; If you do not already have a rod license this experience requires all participants to purchase a 1 day 'Trout & Coarse' fishing license at an additional cost of £6 from the Environment Agency. We cannot do this on your behalf but will provide the link in our confirmation email. This can be purchased up to 30 days in advance and we will need to take a note of your license number on the day.
