So Slow (Sat 5th April 2025)

Overview

This course is all about achieving the best flavour from your ingredients through marinating, rubs, brining and slow cooking.  You will work through a lot of techniques throughout the day as you prepare and cook your dishes.  Here is your menu for the day – 

09.45am - Arrive for some delicious refreshment  
10.00am - The cooking starts! 

Beef Shin in Guinness with Ancho Sauce- brine, rub and slow cook this dish, to get the best from these rich and earthy flavours. Layered Baked Roots- using the best seasonal root vegetables, we will make a layered dish, slow cooked with herbs and spices to accompany your other dishes or eat on its own. 

Smoked Pork Butt with Mexican BBQ Sauce and Chimichurri– we will prepare the pork and cook it low and slow in our smoker.  Later we will prepare a zingy chimichurri relish in a mortar and pestle to accompany the pork. 

Roasted Leeks with Romesco Sauce- the slow roasted flavours of leeks are so delicious served with this complex sauce using roasted red pepper, onion, and garlic; tempered with a little chilli and smoked paprika and sherry vinegar.
