Join us for a unique guided "Bait to Plate" experience which will see you taking on the challenge of outwitting & catching a Trout "on the fly" before spending the afternoon getting hands on preparing & cooking a seasonal selection of fish & seafood dishes at the Fins & Forks Kitchen ahead of the culmination of the day... the Chef's Table dining. You can also expect to prepare and cure your catch ready for cold smoking. We will post your fish out to you once its ready for an amazing brunch with a great story, don't forget the eggs, avocado & sourdough!
Our day starts with a guided fly fishing experience at the gin clear waters of Chalk Springs Trout Fishery nestled on the edge of the historic and beautiful market town of Arundel.
Upon arrival we begin with a little basic instruction to give you the best chance of catching that monster, then head to the lakes to cast our fly for the first time. Throughout our fishing time you will receive support and tuition from a licenced angling coach. Although we can never guarantee fish so far 85% of our clients have caught successfully had trout to the net. (1 fish is provided per person - so even if you don't manage to catch it yourself you wont go away empty handed) Following an incredibly immersive fishing session (complete with a homemade half-time sausage roll & soft drink) and with fish in hand we make the short journey (15-20 minutes) over to Fins & Forks HQ for a hands on session at our smokehouse kitchen. We have designed our smokehouse kitchen/dining space to take no more than 4 experience clients at a time, ensuring you get a quality and personal afternoon, and receive as much 1 to 1 guidance as you need.
After sampling our smokehouse pate and settling in we get hands on, preparing and curing your catch for cold smoking (with you choosing from beetroot/coffee or plain cure flavours) and then move on to preparing a selection of our favourite recipes using freshly landed & responsibly sourced Sussex saltwater species ahead of the culmination of the day... The Chefs Table dining experience. To compliment your meal we stock a range of Sussex's best still & sparkling wines, craft beers and these are available to purchase on the day (once the knifes go away)
After you leave us (complete with full belly, new culinary skills and tales of epic fishing battles) and once your fish is cured we will get to work putting it through the cold smoker. When its ready for the brunch treatment we hand slice, package and post it out to you in chilled insulated woolcool packaging, ensuring your fish is at its absolute best when it arrives at your door.
Suitable for all abilities, absolute fishing and kitchen beginners are welcomed with open arms. This experience is hosted by a fully qualified chef & licensed angling coach.
PLEASE NOTE; If you do not already have a rod license this experience requires all participants to purchase a 1 day 'Trout & Coarse' fishing license at an additional cost of £6 from the Environment Agency. We cannot do this on your behalf but will provide the link in our confirmation email. This can be purchased up to 30 days in advance and we will need to take a note of your license number on the day.
