Smoked Lamport pigeon breast – beetroot carpaccio – crème fraîche – pumpkin seed granola – pickled fennel – celeriac ice cream
Game cigar – black onion powder – beetroot powder – spiced plum chutney – orange gel
Pan roasted venison - creamed Maris Piper - cavalo nero – blackberry and carignan sauce – parsnip crisps
Blackberry and Apple Crumble (Poached caramelised Braeburn apple – oat crumble – blackberry sorbet – crème anglaise mousse)
