Highlights

Chef Marcus Clayton has had a distinguished career since graduating from East Sussex College in 2015. He has worked his way up through some of the best kitchens in the South East, including Thackeray’s, The Small Holding, Hide and Fox restaurants. In 2023 Marcus won the UK San Pellegrino Young Chef of the Year competition and competed in the world final. 

Marcus is now making a name for himself with Spoons by Clayton, a pop up and private dining project, championing unique vegetable focused cookery. We are proud to host his first private dining event here at Tibbs as the first of many guest chef events. Marcus will deliver a five-course vegetarian tasting menu based on locally sourced produce presented in fascinating new ways.
